Ackee and Saltfish

Ingredients

• •1 lb salted cod, soaked overnight
• •1 can (19 oz) ackee, drained
• •3 tbsp butter or oil
• •1 onion, sliced
• •1 bell pepper, sliced
• •1-2 scotch bonnet peppers, seeded and minced
• •2 tomatoes, chopped
• •3 scallions, sliced
• •2 sprigs fresh thyme
• •Black pepper, to taste

Steps

1. 1.Soak the salted cod in cold water overnight (or at least 8 hours), changing the water two or three times, to draw out most of the salt.
2. 2.Drain, cover with fresh water, and simmer gently for 20 minutes until tender, then drain, remove any skin and bones, and flake the flesh.
3. 3.Melt the butter in a large skillet and cook the onion, bell pepper, scotch bonnet, and thyme for about 3 minutes until softened.
4. 4.Add the tomatoes and flaked fish and cook, stirring, for 8-10 minutes until the tomatoes break down.
5. 5.Add the drained ackee and gently fold it in - don't stir vigorously, since ackee is delicate and will break into mush if handled roughly.
6. 6.Cook just until heated through, a couple of minutes, then stir in the scallions and season with black pepper.
7. 7.Serve hot with fried dumplings, breadfruit, or boiled green bananas.
