Baked Chicken Tenders

Ingredients

• •1 lb chicken tenders
• •Salt and pepper to taste
• •1/2 cup flour
• •1/2 tsp garlic powder
• •2 eggs, beaten
• •1 cup panko breadcrumbs
• •3 tbsp olive oil

Steps

1. 1.Preheat oven to 425°F and set a wire rack inside a baking sheet.
2. 2.Season the chicken tenders with salt and pepper.
3. 3.Mix the flour with the garlic powder and a pinch of salt.
4. 4.Dredge each chicken tender in the seasoned flour, then egg, then panko, pressing to help it stick.
5. 5.Arrange on the wire rack and drizzle with olive oil - the rack lets air circulate underneath, which is what keeps the bottom crispy instead of soggy.
6. 6.Bake for 20-25 minutes, flipping halfway, until golden and cooked through.
