Baked Chicken Tenders
Crispy panko-breaded chicken tenders baked instead of fried, seasoned at every stage and baked on a wire rack so air circulates underneath - baking directly on a sheet pan is why most baked tenders turn out soggy on the bottom instead of crispy all around.

Ingredients
- •1 lb chicken tenders
- •Salt and pepper to taste
- •1/2 cup flour
- •1/2 tsp garlic powder
- •2 eggs, beaten
- •1 cup panko breadcrumbs
- •3 tbsp olive oil
Steps
- 1.Preheat oven to 425°F and set a wire rack inside a baking sheet.
- 2.Season the chicken tenders with salt and pepper.
- 3.Mix the flour with the garlic powder and a pinch of salt.
- 4.Dredge each chicken tender in the seasoned flour, then egg, then panko, pressing to help it stick.
- 5.Arrange on the wire rack and drizzle with olive oil - the rack lets air circulate underneath, which is what keeps the bottom crispy instead of soggy.
- 6.Bake for 20-25 minutes, flipping halfway, until golden and cooked through.
