Banh Mi
A Vietnamese sandwich of crusty baguette spread with pâté and mayonnaise, filled with lemongrass pork, quick-pickled carrot and daikon, cucumber, jalapeño, and cilantro.

Ingredients
- ā¢1 lb pork tenderloin, sliced thin
- ā¢2 tbsp fish sauce
- ā¢1 tbsp lemongrass, minced (or 1 tsp lemongrass paste)
- ā¢2 cloves garlic, minced
- ā¢1 tbsp sugar
- ā¢1 carrot, julienned
- ā¢1 small daikon radish, julienned
- ā¢1/2 cup rice vinegar
- ā¢1/2 cup water
- ā¢2 tbsp sugar (for pickling)
- ā¢1/2 tsp salt
- ā¢2 baguettes, halved
- ā¢1/4 cup pĆ¢tĆ©
- ā¢1/4 cup mayonnaise
- ā¢1/2 cucumber, thinly sliced
- ā¢1 jalapeƱo, sliced
- ā¢1/4 cup fresh cilantro
Steps
- 1.Combine the sliced carrot and daikon; bring the rice vinegar, water, 2 tbsp sugar, and salt to a boil, pour over the vegetables, and let cool - these can be used after 1 hour or left to mellow overnight.
- 2.Marinate the pork in fish sauce, lemongrass, garlic, and 1 tbsp sugar for at least 30 minutes, then cook in a hot skillet until browned and cooked through.
- 3.Spread pâté on one side of the baguettes and mayonnaise on the other.
- 4.Layer in the pork, pickled carrot and daikon, cucumber, jalapeƱo, and cilantro, then slice and serve.
