Ingredients
- •2 cans black beans, drained, 1/4 cup liquid reserved
- •1 tsp cumin
- •2 cloves garlic, minced
- •1 tbsp lime juice
- •8 small corn tortillas
- •1 cup shredded lettuce
- •1/2 cup salsa
Steps
- 1.Warm the black beans with the garlic, cumin, and reserved bean liquid in a saucepan, mashing slightly and simmering until saucy, about 5 minutes - the reserved liquid is what keeps the beans from drying out into a paste.
- 2.Stir in the lime juice.
- 3.Char the tortillas directly over an open flame or in a dry skillet until lightly spotted.
- 4.Fill each tortilla with black beans and lettuce.
- 5.Top with salsa before serving.
