Ingredients
- •2 cans black beans
- •1/2 lb smoked sausage (linguiça if available), sliced
- •1/2 lb pork shoulder, cubed
- •4 strips bacon, chopped
- •1 onion, diced
- •4 cloves garlic, minced
- •2 bay leaves
- •1/2 tsp cumin
- •4 cups chicken broth
- •Orange slices, for serving
Steps
- 1.Cook the bacon in a large pot until crisp, then brown the pork and sausage in the rendered fat; set the meat aside.
- 2.Sauté the onion and garlic in the same pot until softened.
- 3.Return the meat to the pot with the black beans, bay leaves, cumin, and chicken broth.
- 4.Simmer, partially covered, for 1.5 hours until deeply thickened, mashing some beans to help thicken.
- 5.Discard the bay leaves and serve with rice, orange slices, and sautéed greens on the side to cut the richness.
