Budae Jjigae

Ingredients

• •1 can (12 oz) Spam, sliced
• •4 sausages or hot dogs, sliced
• •1 cup kimchi, chopped
• •1/2 block tofu, sliced
• •1 can baked beans
• •1 onion, sliced
• •1 package ramyeon noodles, seasoning packet discarded
• •4 cups anchovy or beef stock
• •3 tbsp gochujang
• •2 tbsp gochugaru
• •2 tbsp soy sauce
• •2 cloves garlic, minced
• •1 tbsp ketchup
• •1-2 slices American cheese, for topping
• •Green onions, sliced, for garnish

Steps

1. 1.Mix the gochujang, gochugaru, soy sauce, garlic, ketchup, and a pinch of black pepper into a sauce.
2. 2.Arrange the Spam, sausage, kimchi, tofu, baked beans, and onion in a wide shallow pot, and spoon the sauce into the center.
3. 3.Pour the stock in around the edges of the pot without stirring the sauce into it yet.
4. 4.Cover and bring to a boil over medium-high heat, about 8 minutes.
5. 5.Add the ramyeon noodles and boil uncovered for 2-3 minutes until just cooked.
6. 6.Lay the cheese slices on top so they melt into the broth, and sprinkle with green onions.
