- •2 eggs, beaten
- •1 1/2 cups panko breadcrumbs
- •1/2 cup grated Parmesan (for breading)

Steps

- 3.Dredge each chicken cutlet in flour, then egg, then press into the panko mixture to coat evenly.
- 4.Heat the oil in a large skillet over medium-high heat and fry the cutlets for 2-3 minutes per side until golden - pan-frying first is what gives the crust its crispness, since the chicken only needs to brown here, not cook through.
- 5.Transfer the cutlets to a baking dish, top each with marinara sauce, mozzarella, and Parmesan.
