Chicken Quesadillas
Chicken seasoned with cumin, chili powder, and garlic, melted with Oaxaca (or Monterey Jack) cheese in a lightly oiled tortilla - Oaxaca cheese's stretchy melt and the seasoned chicken are what separate real quesadillas from a plain cheddar-and-chicken pocket.

Ingredients
- •2 cups shredded cooked chicken
- •1 tsp cumin
- •1 tsp chili powder
- •1/2 tsp garlic powder
- •Salt to taste
- •1/2 onion, diced
- •1/2 red pepper, diced
- •2 cups shredded Oaxaca cheese (or Monterey Jack)
- •8 flour tortillas
- •2 tbsp chopped cilantro
- •1 tbsp vegetable oil
Steps
- 1.Toss the shredded chicken with cumin, chili powder, garlic powder, and salt.
- 2.Sauté the onion and red pepper until softened, then mix with the seasoned chicken and cilantro.
- 3.Lay a tortilla flat, sprinkle cheese and the chicken mixture over half, then fold over.
- 4.Heat oil in a skillet over medium heat and cook each quesadilla until golden and crispy and the cheese is fully melted, about 3 minutes per side.
- 5.Slice into wedges and serve with salsa or sour cream.
