Ingredients
- •8 corn tortillas, cut into wedges (day-old if possible)
- •2 tbsp vegetable oil (for frying tortillas)
- •4 tomatoes
- •2 dried guajillo chiles, stemmed and seeded
- •2 cloves garlic
- •1/4 onion
- •Salt to taste
- •1 tbsp vegetable oil (for the salsa)
- •4 eggs
- •1/2 cup crumbled cotija cheese
- •1/4 cup Mexican crema
- •1/2 avocado, sliced
Steps
- 1.Fry the tortilla wedges in oil until crisp, or use store-bought tortilla chips.
- 2.Broil the tomatoes, guajillo chiles, garlic, and onion until charred and blistered, about 8-10 minutes, then blend into a smooth salsa.
- 3.Heat oil in a large skillet, add the salsa, and cook until slightly thickened; season with salt.
- 4.Toss the crispy tortillas in the hot salsa until coated but still slightly crisp.
- 5.Fry the eggs separately to your liking, then top the chilaquiles with a fried egg, cotija, crema, and avocado.
