Chimichurri Steak
Grilled steak topped with chimichurri built on oregano and red pepper flakes as much as parsley and garlic, rested at least 30 minutes before serving so the flavors meld - skipping the rest is the most common way home versions fall short.

- •1 cup fresh parsley, chopped
- •1/4 cup fresh oregano, chopped (or 2 tbsp dried)
- •4 cloves garlic, minced
- •1/2 tsp red pepper flakes
- •1/2 cup olive oil
- •1/4 cup red wine vinegar
- •Salt and pepper to taste
Steps
- 1.Whisk together the parsley, oregano, garlic, red pepper flakes, olive oil, red wine vinegar, and salt to make the chimichurri.
- 2.Let the chimichurri rest at room temperature for at least 30 minutes so the garlic mellows and the flavors meld - this rest is what most home versions skip.
- 3.Season the steaks with salt and pepper and grill over high heat for 4-5 minutes per side to medium-rare.
- 4.Let the steaks rest for 5 minutes.
- 5.Spoon the chimichurri generously over the steaks before serving.
