Classic Cheese Quesadilla
A crispy tortilla stuffed with melted cheese, pressed flat and cooked covered so the inside melts through before the outside burns - cooking it uncovered and unpressed is why quesadillas often come out with a scorched outside and a cold cheese center.

Ingredients
- •1 large flour tortilla
- •1 cup shredded cheddar cheese
- •1 tbsp butter
Steps
- 1.Sprinkle cheese over half of the tortilla, then fold the other half over.
- 2.Melt butter in a skillet over medium heat.
- 3.Cook the quesadilla covered, pressing down gently with a spatula, for 2-3 minutes per side until golden and the cheese melts - covering it traps heat so the cheese melts through before the outside scorches.
- 4.Slice into wedges before serving.
