Cobb Salad
A hearty chopped salad arranged in neat rows over finely chopped lettuce - chicken, bacon, egg, tomato, avocado, chives, and blue cheese - invented at the Hollywood Brown Derby; tomato and chives are the two ingredients most modern versions leave out.

Ingredients
- •2 chicken breasts, cooked and diced
- •6 slices bacon, cooked and chopped
- •2 eggs, hard-boiled and chopped
- •2 tomatoes, diced
- •1 avocado, diced
- •1/2 cup crumbled blue cheese
- •2 tbsp chopped chives
- •1 head romaine lettuce, finely chopped
- •3 tbsp olive oil
- •1 tbsp red wine vinegar
Steps
- 1.Finely chop the romaine and arrange on a large platter - the original Brown Derby version chopped everything fine rather than in big chunks.
- 2.Top with neat rows of chicken, bacon, egg, tomato, avocado, and blue cheese, then scatter the chives over the top.
- 3.Whisk together the olive oil and red wine vinegar for the dressing.
- 4.Drizzle the dressing over the salad just before serving.
