Corn Chowder

Ingredients
- •4 cups corn kernels, cobs reserved if using fresh corn
- •3 potatoes, cubed
- •1 onion, diced
- •4 cups vegetable broth
- •1 cup heavy cream
- •2 tbsp butter
- •Salt to taste
Steps
- 1.Melt the butter and sauté the onion until softened.
- 2.Add the potatoes, corn, the reserved cobs if using fresh corn, and vegetable broth, then simmer until the potatoes are tender, about 20 minutes - the cobs release starch and flavor as they simmer.
- 3.Remove the cobs, then mash some of the mixture lightly to thicken the chowder.
- 4.Stir in the cream, season with salt, and simmer for 5 more minutes.
