Dorayaki

Ingredients

• •4 eggs
• •1/2 cup sugar
• •3 tbsp honey
• •1 1/2 cups all-purpose flour
• •1 tsp baking powder
• •3 tbsp water
• •1 tsp vegetable oil, for the pan
• •1 1/2 cups sweet red bean paste (anko)

Steps

1. 1.Whisk the eggs and sugar together until pale and slightly thickened, then whisk in the honey and water.
2. 2.Sift the flour and baking powder together and gently fold into the egg mixture until just smooth, taking care not to overmix.
3. 3.Cover the batter and let it rest for 15-30 minutes - this relaxes the gluten and lets the flavors settle, giving a more tender, evenly domed pancake.
4. 4.Heat a non-stick pan or griddle over low-medium heat and lightly wipe with oil.
5. 5.Pour small ladles of batter to form 3-4 inch rounds, cooking until bubbles form on the surface and the edges look set, about 1-2 minutes.
6. 6.Flip and cook the other side for another minute, until lightly golden on both sides but still soft.
7. 7.Stack the cooked pancakes under a clean towel to keep them soft and steamy while you cook the rest.
8. 8.Spread a generous layer of sweet red bean paste on the flat side of one pancake and sandwich with a second pancake, flat sides together.
