Fluffy Pancakes
Classic fluffy pancakes made with real buttermilk instead of plain milk for the tang and tenderness the name promises, rested briefly before cooking - swapping in plain milk is why many 'buttermilk' pancakes taste more like flat pancakes than the real thing.

Ingredients
- •1 1/2 cups all-purpose flour
- •2 tsp baking powder
- •1/2 tsp baking soda
- •1 tsp salt
- •1 tbsp sugar
- •1 1/4 cups buttermilk
- •1 egg
- •3 tbsp melted butter
Steps
- 1.Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
- 2.In a separate bowl, whisk the buttermilk, egg, and melted butter together.
- 3.Pour the wet ingredients into the dry ingredients and stir until just combined - a few lumps are fine - then let the batter rest for 5 minutes so the baking soda reacting with the buttermilk gives the pancakes their rise.
- 4.Heat a lightly greased griddle over medium heat and pour 1/4 cup batter per pancake.
- 5.Cook until bubbles form on the surface, then flip and cook until golden on the other side.
