Focaccia
A flat, olive-oil-rich Italian bread proofed twice - once in bulk, then again in the pan after dimpling - for the airy, open crumb real focaccia is known for; skipping that second proof, which many quick versions do, leaves it dense.

Ingredients
- •4 cups flour
- •2 1/4 tsp active dry yeast
- •1 3/4 cups warm water
- •1/2 cup olive oil, divided
- •1 tbsp flaky salt
Steps
- 1.Mix the flour, yeast, warm water, and 2 tablespoons of the olive oil into a wet, shaggy dough; knead briefly until it comes together.
- 2.Cover and let rise in a bowl for 60-90 minutes until doubled.
- 3.Generously oil a baking pan with 2 tablespoons of olive oil, then press the dough into it, stretching it toward the edges.
- 4.Cover again and let proof a second time for 60-90 minutes until puffy and reaching the edges of the pan - this second proof is what gives focaccia its airy, open crumb instead of a dense one.
- 5.Dimple the dough deeply with oiled fingers all the way to the bottom of the pan, then drizzle with the remaining olive oil and sprinkle with flaky salt.
- 6.Bake at 425°F for 20-25 minutes until deeply golden.
