Gyuvech
A baked Bulgarian casserole of pork and mixed vegetables in a clay pot, seasoned with chubritsa - started in a cold oven so the clay doesn't crack.

Ingredients
- •1 lb pork, cubed
- •1 onion, diced
- •1 carrot, sliced
- •1 green bell pepper, diced
- •1 eggplant, cubed
- •2 potatoes, cubed
- •1 zucchini, sliced
- •2 tomatoes, diced
- •2 cloves garlic, minced
- •3 tbsp sunflower oil
- •1 tsp chubritsa (Bulgarian savory)
- •Salt and black pepper to taste
Steps
- 1.Brown the pork in sunflower oil with the onion and garlic in a skillet, then season with salt, pepper, and chubritsa.
- 2.Layer the browned pork and all the vegetables in a clay pot or baking dish, cover, and place in a cold oven - starting cold prevents a clay pot from cracking.
- 3.Set the oven to 375°F and bake for about 2 hours until the meat and vegetables are fully tender.
- 4.Serve hot straight from the pot.
