Huevos Rancheros
Lightly fried corn tortillas topped with fried eggs and a cooked salsa ranchera of charred tomato, onion, garlic, and jalapeƱo - the cooked ranchera sauce, not jarred salsa, is what real huevos rancheros is built on, finished with crumbled cotija and avocado.

Ingredients
- ā¢4 corn tortillas
- ā¢4 eggs
- ā¢1 can black beans, drained (or refried beans)
- ā¢3 tomatoes
- ā¢1/2 onion
- ā¢2 cloves garlic
- ā¢1 jalapeƱo, seeded
- ā¢3 tbsp vegetable oil (divided)
- ā¢1/2 cup crumbled cotija cheese (or queso fresco)
- ā¢1/4 cup chopped cilantro
- ā¢1 avocado, sliced
Steps
- 1.Char the tomatoes, onion, garlic, and jalapeƱo in a dry skillet or under the broiler until blackened in spots, then blend into a chunky sauce.
- 2.Heat 1 tbsp of the oil and fry the blended sauce for 5 minutes until it darkens slightly and thickens - this "sofrito" step removes the raw edge and builds depth.
- 3.Warm the black beans in a small saucepan.
- 4.Fry the tortillas briefly in the remaining oil, just 20-30 seconds per side until lightly crisp but still pliable, then set on plates.
- 5.Fry the eggs sunny-side up in the same pan.
- 6.Top each tortilla with beans, a fried egg, the warm ranchera sauce, cotija, cilantro, and avocado.
