Sweet potato glass noodles tossed with beef, mushrooms, and vegetables that are each stir-fried and seasoned separately before combining - cooking everything together muddies the colors and textures that define real japchae.

Ingredients
- •8 oz sweet potato glass noodles
- •1/2 lb beef, sliced thin
- •4 cloves garlic, minced (divided)
- •1 tbsp sugar (divided)
- •1/2 tsp black pepper
- •1 onion, sliced
- •4 shiitake mushrooms, sliced
- •1 carrot, julienned
- •2 cups spinach
- •1/3 cup soy sauce (divided)
- •3 tbsp sesame oil (divided)
- •2 green onions, sliced
Steps
- 1.Toss the beef and sliced shiitake with half the garlic, a pinch of the sugar, the black pepper, a splash of the soy sauce, and a little sesame oil; let marinate briefly while you prep the vegetables.
- 2.Cook the glass noodles according to package instructions, then drain and toss with some soy sauce, sugar, and sesame oil while still warm so they absorb the seasoning.
- 3.Stir-fry the onion until softened, then the carrot until just tender-crisp, then the marinated beef and shiitake - cooking each separately keeps their colors and textures distinct; season each lightly with salt as you go.
- 4.Blanch the spinach for 30-60 seconds, shock it in cold water, squeeze dry, and toss with the remaining garlic, a little sesame oil, and a pinch of salt.
- 5.Combine the noodles with all the separately cooked vegetables and beef, tossing gently with the remaining soy sauce and sesame oil to balance the seasoning.
- 6.Top with sliced green onions before serving.
