Lasagna Soup

Ingredients
- •1 lb ground beef
- •1 onion, diced
- •2 cloves garlic, minced
- •1 can crushed tomatoes
- •6 cups beef broth
- •1 Parmesan rind
- •8 lasagna noodles, broken into pieces
- •1/2 cup ricotta cheese
- •1/4 cup grated parmesan
- •1/2 tsp Italian seasoning
- •Shredded mozzarella, for serving
Steps
- 1.Brown the ground beef with the onion in a large pot, then add the garlic and cook for 1 minute.
- 2.Stir in the crushed tomatoes, beef broth, and Parmesan rind, then bring to a boil.
- 3.Add the broken lasagna noodles and simmer for 12-15 minutes until tender; remove the Parmesan rind before serving.
- 4.Mix the ricotta with the grated parmesan and Italian seasoning - seasoning the ricotta topping is what most quick versions skip.
- 5.Serve the soup topped with a dollop of the seasoned ricotta and shredded mozzarella.
