Loco Moco

Ingredients

• •1.5 lb ground beef (75-80% lean)
• •1/4 cup onion, chopped
• •2 cloves garlic, minced
• •1 tbsp Worcestershire sauce
• •Salt and pepper, to taste
• •4 cups cooked short-grain rice
• •1 onion, sliced, for gravy
• •8 oz mushrooms, sliced
• •2 tbsp flour
• •2 cups beef broth
• •4 eggs
• •Green onions, sliced, for garnish

Steps

1. 1.Combine the ground beef with the chopped onion, garlic, Worcestershire sauce, salt, and pepper, and shape into 4 patties, pressing a small indentation in the center of each so they stay flat while cooking.
2. 2.Cook the patties on a hot griddle or skillet until well seared on both sides and cooked through, then remove and set aside, keeping the rendered fat in the pan - searing on the same surface used for the gravy is what builds its flavor.
3. 3.Sauté the sliced onion and mushrooms in the rendered fat until softened.
4. 4.Sprinkle in the flour and cook for a minute, then gradually whisk in the beef broth and simmer until the gravy thickens.
5. 5.Fry the eggs one at a time in a little of the reserved fat until the whites are just set and the yolks are still runny.
6. 6.To assemble, scoop rice into each bowl, top with a beef patty, ladle mushroom-onion gravy generously over the top, then finish with a fried egg and a scatter of sliced green onions.
