Ingredients
- •2.5 cups flour
- •1 egg
- •1/2 tsp salt
- •2/3 cup water
- •1/2 lb ground lamb or beef
- •1 small onion, finely minced
- •2 tbsp chopped parsley
- •2 cups plain yogurt
- •3 cloves garlic, minced, for the yogurt sauce
- •4 tbsp butter
- •1 tbsp red pepper flakes (Aleppo-style)
- •1/2 tsp dried mint
Steps
- 1.Knead the flour, egg, salt, and water into a firm, elastic dough, about 8-10 minutes, then cover and rest for 30 minutes.
- 2.Mix the ground meat with the onion, parsley, salt, and pepper for the filling.
- 3.Roll the dough out very thin and cut into small squares, about 1 inch across - the smaller and more delicate the manti, the more impressive they're traditionally considered.
- 4.Place a small dab of filling in the center of each square, bring two opposite corners up and pinch them together, then bring the other two corners up and pinch all four seams tightly to form a small purse or star shape.
- 5.Boil the manti in salted water for 3-5 minutes until they float and are cooked through.
- 6.Whisk the yogurt with the minced garlic and a pinch of salt for the sauce.
- 7.Melt the butter with the red pepper flakes and dried mint until fragrant and bubbling.
