Ingredients
- •3 1/2 cups flour
- •2 1/4 tsp yeast
- •2 tbsp sugar
- •1 cup warm milk
- •1 egg
- •3 tbsp vegetable oil
- •1 tsp salt
- •4 tbsp butter, melted (for the topping)
- •5 oz sirene (Bulgarian white brined cheese), crumbled
- •2 tbsp milk (for the topping)
Steps
- 1.Dissolve the yeast and sugar in the warm milk and let sit for 5-10 minutes until foamy.
- 2.Mix the flour and salt in a large bowl, then add the yeast mixture, egg, and oil. Knead for 8-10 minutes until smooth and elastic.
- 3.Cover and let rise in a warm place for 1 hour, until doubled in size.
- 4.Punch down the dough and divide into 12 equal pieces. Roll each into a smooth ball.
- 5.Arrange the balls snugly touching each other in a greased round or square baking pan - baking them touching, rather than spaced apart, is what makes them pull-apart rolls with soft sides instead of separate, all-around-crusty buns.
- 6.Cover and let rise again for 30-40 minutes, until puffy.
- 7.Preheat the oven to 375°F and bake for 15 minutes.
- 8.Meanwhile, whisk together the melted butter, crumbled sirene, and 2 tbsp milk to make the topping.
- 9.Remove the rolls from the oven, brush or spoon the cheese topping evenly over the top, and return to the oven for another 10-12 minutes, until deep golden and the topping is set.
