One-Pot Chicken and Rice

Ingredients

• •4 chicken thighs
• •1 1/2 cups rice
• •1 onion, diced
• •2 cloves garlic, minced
• •3 cups chicken broth
• •2 tbsp vegetable oil
• •Salt to taste
• •Pepper to taste

Steps

1. 1.Season the chicken thighs with salt and pepper, then sear in oil in a large pot until browned; set aside.
2. 2.Sauté the onion and garlic in the same pot until softened.
3. 3.Stir in the rice and chicken broth, then nestle the chicken back into the pot.
4. 4.Cover and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
5. 5.Remove from heat and let rest, covered, for 5 minutes before serving - resting lets the rice finish steaming evenly instead of staying wet at the bottom.
