Onigirazu

Ingredients

• •4 sheets nori
• •4 cups cooked short-grain rice
• •Soy sauce, a splash, for seasoning rice
• •4 leaves lettuce
• •4 slices ham or cooked chicken
• •2 eggs, fried or as tamagoyaki
• •1 avocado, sliced
• •4 tbsp mayonnaise

Steps

1. 1.Lay a sheet of plastic wrap on a work surface, place a nori sheet on top shiny-side down, rotated so it looks like a diamond relative to the wrap.
2. 2.Wet your hands and spread about a quarter of the rice in a compact square in the center of the nori, roughly 3.5 inches across.
3. 3.Layer the fillings of your choice evenly over the rice - lettuce, protein, egg, and a dollop of mayo work well together, but keep the stack fairly flat so the parcel folds cleanly.
4. 4.Top with another layer of rice, again pressed into a compact square.
5. 5.Fold each corner of the nori up and over the rice toward the center, using the plastic wrap to help press and seal it into a neat square parcel.
6. 6.Wrap tightly in the plastic and let it rest for a few minutes so the nori softens slightly and the parcel holds together - cutting it too soon will cause it to fall apart.
7. 7.Unwrap and slice in half with a sharp, wet knife to reveal the cross-section of colorful layers, and repeat for the remaining portions.
