Ovcharska Salad (Shepherd's Salad)
Bulgaria's hearty 'shepherd's salad' - built on the same tomato-cucumber-onion-pepper base as shopska salad, but topped with roasted pepper, ham, mushrooms, and hard-boiled egg before the sirene is grated over - the extra toppings are what turn a light side salad into a filling meal on their own.

Ingredients
- •3 ripe tomatoes, diced
- •1 cucumber, diced
- •1/2 onion, finely chopped
- •1 roasted red bell pepper, sliced
- •3.5 oz cooked ham, diced
- •3.5 oz mushrooms, sautéed and sliced
- •2 hard-boiled eggs, sliced
- •5 oz sirene (Bulgarian white brined cheese), grated
- •3 tbsp vegetable oil
- •Salt to taste
Steps
- 1.Combine the diced tomatoes, cucumber, and onion in a large salad bowl.
- 2.Add the sliced roasted pepper, diced ham, and sautéed mushrooms, then toss gently with the vegetable oil and salt.
- 3.Arrange the sliced hard-boiled eggs over the top.
- 4.Finish with a generous layer of grated sirene over the entire salad - like shopska salad, the cheese sits on top rather than being tossed in, so it stays visible and doesn't dissolve into the dressing.
- 5.Serve immediately at room temperature.
