Pad Thai

Ingredients
- •8 oz rice noodles
- •2 tbsp vegetable oil
- •2 cloves garlic, minced
- •2 eggs
- •8 oz shrimp or tofu
- •3 tbsp tamarind paste
- •2 tbsp fish sauce
- •2 tbsp palm sugar (or brown sugar)
- •2 cups bean sprouts
- •3 green onions, sliced
- •1/4 cup crushed peanuts
- •Lime wedges, for serving
Steps
- 1.Soak the rice noodles in warm water until pliable, then drain.
- 2.Whisk together the tamarind paste, fish sauce, and palm sugar until the sugar dissolves; taste and adjust for a balance of sour, salty, and sweet.
- 3.Heat oil in a wok, sauté the garlic briefly, then scramble the eggs and push to one side; add the shrimp or tofu and cook through.
- 4.Add the noodles and the tamarind sauce, tossing to coat, then stir in the bean sprouts and green onions.
- 5.Top with crushed peanuts and serve with lime wedges to squeeze over just before eating.
