- •1 zucchini, sliced
- •1 cup cherry tomatoes, halved
- •1 cup broccoli florets
- •3 tbsp olive oil
- •2 cloves garlic, minced
- •1/4 cup grated Parmesan
- •1/2 lemon, juiced
- •Salt to taste
- •Pepper to taste
Steps
- 1.Cook the penne in salted boiling water until al dente, then drain.
- 2.Sauté the zucchini and broccoli in olive oil with the garlic until crisp-tender, seasoning with salt and pepper.
