Peruvian Lomo Saltado

Ingredients
- •1 lb sirloin steak, sliced thin
- •1 tsp cumin
- •Salt and pepper to taste
- •2 tbsp vegetable oil
- •1 onion, sliced
- •3 cloves garlic, minced
- •1 tbsp aji amarillo paste
- •2 tomatoes, sliced into wedges
- •3 tbsp soy sauce
- •1 tbsp red wine vinegar
- •1 tsp sugar
- •3 cups frozen fries, cooked until crispy
- •2 tbsp chopped cilantro, for garnish
Steps
- 1.Season the beef with cumin, salt, and pepper.
- 2.Heat the oil in a wok or large skillet over high heat until nearly smoking, then sear the beef undisturbed for 1-2 minutes to develop a deep crust; toss briefly and set aside - real high heat is what keeps the beef from steaming gray instead of searing.
- 3.Add the onion and stir-fry for 1-2 minutes, then add the garlic and aji amarillo paste and cook for 30 seconds until fragrant.
- 4.Add the tomatoes and cook briefly, about 1 minute, until just starting to soften but still holding their shape.
- 5.Return the beef to the pan with the soy sauce, vinegar, and sugar, tossing to combine.
- 6.Add the hot, crispy fries directly to the pan and toss gently so some absorb the sauce while others stay crisp.
- 7.
