Pork Dumplings
Pan-fried and steamed dumplings filled with seasoned pork and cabbage - the cabbage is salted and squeezed dry first so the filling stays juicy instead of turning the wrappers soggy.

Ingredients
- •1 lb ground pork
- •1 cup finely chopped napa cabbage
- •1/2 tsp salt (for salting the cabbage)
- •2 green onions, minced
- •1 tbsp soy sauce
- •1 tbsp grated ginger
- •1 tbsp Shaoxing wine
- •1 tsp sesame oil
- •1/4 tsp white pepper
- •40 dumpling wrappers
- •2 tbsp vegetable oil
- •Soy sauce and black vinegar, for dipping
Steps
- 1.Toss the chopped cabbage with the salt and let it sit for 15-30 minutes, then squeeze out as much liquid as possible - this keeps the filling from turning soggy.
- 2.Mix the squeezed cabbage with the ground pork, green onions, soy sauce, ginger, Shaoxing wine, sesame oil, and white pepper.
- 3.Spoon a small amount of filling onto each wrapper, then fold and seal the edges.
- 4.Heat oil in a skillet and fry the dumplings flat-side down until golden, then add a splash of water, cover, and steam for 5 minutes until cooked through.
- 5.Serve hot with a dipping sauce of soy sauce and black vinegar.
