PĆrzheno Sirene (Fried Bulgarian Cheese)
A classic Bulgarian tavern appetizer of thick sirene slices dredged in flour and egg and pan-fried until the crust turns golden and crisp - sirene doesn't melt the way mozzarella does, so it firms back up as it cools, which is why this is always plated and eaten hot, straight out of the pan.

Ingredients
- âą1 lb sirene, cut into 1/2-inch slices
- âą1/2 cup flour
- âą2 eggs, beaten
- âą3 tbsp vegetable oil
- âą1 tbsp sesame seeds, for serving (optional)
- âą2 tbsp honey, for serving (optional)
Steps
- 1.Pat the sirene slices dry with a paper towel.
- 2.Dredge each slice in the flour, shaking off the excess, then dip in the beaten egg, coating all sides.
- 3.Heat the oil in a nonstick skillet over medium heat until shimmering.
- 4.Fry the slices for 2-3 minutes per side, until the coating is deep golden brown and crisp and the cheese is warmed through but still holding its shape.
- 5.Transfer straight to plates - sirene firms back up as it cools rather than staying melty, so this is meant to be eaten hot, right out of the pan.
- 6.Serve as is, or sprinkle with sesame seeds and drizzle with honey for a sweet-savory version.
