Pulneni Chushki
Bulgarian-style stuffed peppers filled with minced pork, rice, carrot, and chubritsa, baked in tomato sauce and served with a spoonful of yogurt.

Ingredients
- •6 red bell peppers, tops removed and seeded
- •1 lb ground pork
- •1/2 cup rice
- •1 onion, diced
- •1 carrot, diced
- •1 tsp paprika
- •1 tsp chubritsa (Bulgarian savory), or dried oregano and thyme
- •1 cup tomato sauce
- •Plain yogurt, for serving
Steps
- 1.Preheat oven to 375°F. Sauté the onion and carrot in a little oil for 3-4 minutes until fragrant, then add the ground pork and cook, breaking it up, until it changes color.
- 2.Mix the meat and vegetables with the rice, paprika, and chubritsa.
- 3.Stuff each pepper about three-quarters full with the mixture and arrange them in a baking dish.
- 4.Pour the tomato sauce around the peppers and bake covered for 45-50 minutes until the peppers are tender and the rice is cooked; serve with a spoonful of yogurt on top.
