Shakshuka
Eggs poached in a spiced tomato and pepper sauce - a one-pan breakfast from North Africa and the Middle East.

Ingredients
- •2 tbsp olive oil
- •1 onion, diced
- •1 red bell pepper, diced
- •3 cloves garlic, minced
- •1 tsp cumin
- •1 tsp paprika
- •1 can crushed tomatoes
- •1/4 tsp red pepper flakes (optional)
- •6 eggs
- •Salt to taste
- •1/4 cup crumbled feta, for serving
- •Fresh parsley, chopped, for garnish
Steps
- 1.Heat olive oil in a large skillet and sauté the onion and red pepper until softened.
- 2.Add garlic, cumin, paprika, and red pepper flakes; cook for 1 minute until fragrant.
- 3.Pour in the crushed tomatoes and simmer for 10 minutes, seasoning with salt.
- 4.Make small wells in the sauce and crack an egg into each one.
- 5.Cover and cook for 5-8 minutes until the egg whites are set but yolks are still runny.
- 6.Garnish with crumbled feta and fresh parsley before serving.
