Sirene po Shopski
Bulgarian baked sirene in individual clay pots, layered with tomato and pepper and topped with a cracked egg baked just until the white sets and the yolk stays runny - baking it in small individual pots rather than one big dish is what's traditional, so each portion gets its own bubbling, self-contained crust of melted cheese.

Ingredients
- •10 oz sirene (Bulgarian white brined cheese), crumbled
- •2 tomatoes, sliced
- •1 green bell pepper, sliced
- •2 eggs
- •1 tbsp butter
- •Black pepper to taste
Steps
- 1.Preheat the oven to 390°F. Divide half of the crumbled sirene between two small individual clay pots or ramekins.
- 2.Layer the sliced tomato and green pepper over the cheese, then top with the remaining sirene.
- 3.Dot with the butter and bake for 15-20 minutes, until the cheese is bubbling and the vegetables have softened.
- 4.Crack one egg directly on top of each pot and return to the oven for 5-7 minutes, until the whites are just set but the yolks are still runny - baking each portion in its own small pot, rather than one large dish, is what's traditional and keeps every serving bubbling right up to the table.
- 5.Season with black pepper and serve immediately, straight from the oven, with crusty bread.
