- •4 bell peppers, tops removed and seeded
- •1 lb ground beef
- •1 cup cooked rice
- •1 cup tomato sauce
- •1 cup shredded cheese

- 1.Preheat oven to 375°F.
- 2.Blanch the bell peppers in boiling water for 5 minutes to soften slightly, then drain - parboiling first is what keeps the peppers tender all the way through instead of staying crunchy at the base.
- 3.Brown the ground beef, then mix with the cooked rice and half the tomato sauce.
- 4.Stuff the mixture into the parboiled bell peppers and place in a baking dish.
