Stuffed Portobello Mushrooms

Ingredients

• •4 portobello mushroom caps
• •2 cups spinach, chopped
• •2 cloves garlic, minced
• •1/2 cup breadcrumbs
• •1/2 cup shredded mozzarella
• •3 tbsp olive oil
• •Salt to taste
• •Pepper to taste

Steps

1. 1.Preheat oven to 400°F.
2. 2.Brush the mushroom caps with olive oil and place on a baking sheet.
3. 3.Sauté the spinach and garlic until wilted and fragrant, then mix with breadcrumbs, salt, pepper, and half the mozzarella.
4. 4.Stuff the mixture into the caps, top with remaining mozzarella, and bake for 20 minutes.
