Ingredients

• •1.5 lb top sirloin or beef, sliced thin (1/8 inch) against the grain
• •1/2 cup ground roasted peanuts
• •2 tbsp cayenne pepper
• •1 tbsp smoked paprika
• •1 tsp ground ginger
• •1 tsp garlic powder
• •1 tsp onion powder
• •1 tsp brown sugar
• •1/2 tsp salt
• •2 tbsp vegetable oil
• •Extra yaji spice, for dusting after grilling
• •Sliced onion, tomato, and cabbage, for serving

Steps

1. 1.Blend the roasted peanuts, cayenne, smoked paprika, ginger, garlic powder, onion powder, brown sugar, and salt until sandy but not fully powdered - this is the yaji spice.
2. 2.Toss the thinly sliced beef with the oil and a generous coating of yaji spice, then thread flat onto skewers, and marinate for at least 30 minutes, longer for deeper flavor.
3. 3.Grill the skewers over high heat (charcoal for the most authentic flavor), searing hot and fast, about 3-4 minutes per side, flipping regularly, until a spiced crust forms.
4. 4.Immediately after the skewers come off the grill, while the meat is still hot, dust them with more yaji spice - this second coating sticks to the rendered fat and creates the classic spicy street-food finish.
5. 5.Serve hot with sliced onion, tomato, and cabbage on the side.
