Teriyaki Salmon
Pan-seared salmon glazed with a real teriyaki sauce of soy sauce, sake, mirin, and sugar reduced to a thin, glossy glaze - not the cornstarch-thickened, overly sweet version common outside Japan.

Ingredients
- •4 salmon fillets
- •1/3 cup soy sauce
- •1/3 cup sake
- •1/3 cup mirin
- •3 tbsp sugar
- •1 tbsp vegetable oil
Steps
- 1.Combine the soy sauce, sake, mirin, and sugar in a saucepan and bring to a boil, whisking until the sugar dissolves.
- 2.Lower the heat and simmer for 10-15 minutes until the sauce thickens slightly - it should stay thin and glossy, not syrupy; it will thicken further as it cools.
- 3.Sear the salmon in oil, skin-side down, for 4 minutes.
- 4.Flip and pour in about half the teriyaki sauce, simmering for 2-3 minutes until glossy and the salmon is cooked through.
- 5.Spoon the remaining sauce over the top before serving.
