Thai Peanut Noodles
Rice noodles tossed in a peanut sauce built on garlic, ginger, and coconut milk - the aromatics and coconut milk are what separate real Thai peanut sauce from peanut butter thinned with soy sauce.

Ingredients
- •12 oz rice noodles
- •1 tbsp vegetable oil
- •3 cloves garlic, minced
- •1 tbsp grated ginger
- •1/2 cup peanut butter
- •1/2 cup coconut milk
- •3 tbsp soy sauce (or fish sauce for a more traditional, non-vegetarian umami)
- •2 tbsp lime juice
- •1 tbsp brown sugar
- •1/2 tsp red chili flakes (or Thai chili paste)
- •1 carrot, julienned
- •2 green onions, sliced
- •1/4 cup chopped peanuts, for garnish
Steps
- 1.Cook the rice noodles according to package instructions, then drain.
- 2.Heat the oil in a pan and sauté the garlic and ginger until fragrant, about 30 seconds.
- 3.Whisk in the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili flakes over low heat until smooth and slightly thickened, about 5 minutes.
- 4.Add the hot, freshly drained noodles directly to the sauce along with the carrot, tossing while still warm so the sauce coats evenly.
- 5.Top with green onions and chopped peanuts before serving.
