Thai Red Curry

- •1 lb beef, sliced thin
- •1 can coconut milk
- •3 tbsp red curry paste
- •1 cup sliced bell peppers
- •3-4 kaffir lime leaves, torn
- •2 tbsp fish sauce
- •1 tbsp palm sugar (or brown sugar)
- •1 cup Thai basil leaves
Steps
- 1.Fry the red curry paste in the thick coconut cream from the top of the can until fragrant and a thin layer of oil separates, about 5 minutes.
- 2.Add the beef and cook until browned.
- 3.Pour in the remaining coconut milk, bell peppers, and kaffir lime leaves, simmering for 12-15 minutes.
- 4.Stir in the fish sauce and palm sugar until dissolved, then stir in the Thai basil just before serving.
