Ingredients
- •3 medium zucchini, sliced into rounds
- •1 tsp salt (for the zucchini)
- •1/2 cup flour
- •1/3 cup vegetable oil, for frying
- •1 cup plain yogurt
- •2 cloves garlic, minced
- •2 tbsp dill, chopped
- •Salt to taste (for the sauce)

- 1.Toss the zucchini rounds with the salt and place in a colander for 20-30 minutes to draw out excess moisture - skipping this step is what makes the zucchini steam and turn soggy in the pan instead of frying up crisp.
- 2.Pat the zucchini rounds dry with paper towels.
- 3.Dredge each round lightly in flour, shaking off the excess.
- 4.Heat the oil in a skillet over medium heat and fry the zucchini in batches for 2-3 minutes per side, until golden brown. Drain on paper towels.
- 5.Meanwhile, mix the yogurt with the garlic, dill, and a pinch of salt to make the sauce.
- 6.Serve the fried zucchini warm with the garlic-dill yogurt sauce alongside or spooned over the top.
