Tom Yum Soup
A hot and sour Thai soup built on the tom yum trinity of lemongrass, galangal, and kaffir lime leaves, with shrimp, mushrooms, and Thai chilies.

Ingredients
- •1 lb shrimp, peeled
- •6 cups chicken broth
- •2 stalks lemongrass, bottom half only, smashed
- •4-5 slices galangal
- •4 kaffir lime leaves, torn
- •2-3 Thai chilies, smashed
- •1 cup mushrooms, sliced
- •3 tbsp lime juice
- •2 tbsp fish sauce
- •1 tbsp roasted chili paste (nam prik pao), optional
- •Fresh cilantro, for garnish
Steps
- 1.Bring the chicken broth to a simmer with the lemongrass, galangal, kaffir lime leaves, and Thai chilies for 10-15 minutes to infuse - these aromatics are traditionally left in the soup as garnish, not eaten.
- 2.Add the mushrooms and simmer for 5 minutes, then stir in the roasted chili paste if using.
- 3.Add the shrimp and cook until pink, about 3 minutes.
- 4.Remove from heat and stir in the lime juice and fish sauce (adding them off the heat keeps their flavor bright), then garnish with cilantro before serving.
