Vegetable Lo Mein
Stir-fried noodles built on a garlic-ginger-scallion base and a real lo mein sauce of light and dark soy sauce, oyster sauce, and sugar - the aromatics and layered sauce are what separate real lo mein from noodles tossed in plain soy sauce.

Ingredients
- •12 oz lo mein noodles
- •2 tbsp vegetable oil
- •3 cloves garlic, minced
- •1 tbsp grated ginger
- •2 green onions, sliced (white and green parts separated)
- •2 cups shredded cabbage
- •1 carrot, julienned
- •1 red bell pepper, sliced
- •2 tbsp light soy sauce
- •1 tbsp dark soy sauce
- •1 tbsp oyster sauce
- •1 tsp sugar
- •1 tsp sesame oil
Steps
- 1.Cook the noodles according to package instructions, then rinse with cool water and toss with a little oil so they don't clump.
- 2.Whisk together the light soy sauce, dark soy sauce, oyster sauce, sugar, and sesame oil.
- 3.Heat the vegetable oil in a wok and sauté the garlic, ginger, and the white parts of the green onions for about 1 minute until fragrant.
- 4.Add the cabbage, carrot, and red pepper and stir-fry over high heat for 2-3 minutes until just starting to soften.
- 5.Add the noodles and the sauce, tossing everything together until evenly coated.
- 6.Top with the green onion tops and serve hot.
