Vietnamese Fresh Spring Rolls

Ingredients
- •12 rice paper wrappers
- •1 lb shrimp, cooked and halved lengthwise
- •4 oz vermicelli noodles, cooked
- •1 cup fresh mint and Thai basil leaves
- •1 cup shredded lettuce
- •1/4 cup peanut butter (for dipping sauce)
- •2 tbsp hoisin sauce
- •1 tbsp water
- •1 tsp lime juice
- •Crushed peanuts, for garnish
Steps
- 1.Dip each rice paper wrapper briefly in warm water to soften.
- 2.Arrange 2-3 shrimp halves cut-side up in a row near the bottom edge so they'll show through the wrapper, then layer lettuce, noodles, and herbs on top.
- 3.Fold in the sides and roll tightly like a burrito.
- 4.Whisk together the peanut butter, hoisin sauce, water, and lime juice for the dipping sauce, and top with crushed peanuts; serve alongside the rolls.
